Today I’m sharing a raw vegan twist on a holiday classic – eggnog! Traditionally filled with milk, egg yolks, sugar, cream, and alcohol, my version is completely guilt free and full of healthy whole foods. You could enjoy it as a breakfast shake, snack, or even dessert. Im thinking it would be tasty turned into ice cream too, so you could try churning it in an ice cream machine and top it with chocolate sauce and cinnamon for a decadent dessert.
The key here is to use FRESH whole nutmeg. Don’t worry, you can find it at most grocery stores and at all health food stores. It lends an incredible flavour. Ive also incorporated lucuma powder which is a caramel tasting fruit from South America that is very high in nutrients.
Raw Vegan Eggnog
1 cup water
1/2 cup truly raw cashews
1 large frozen banana
1 tablespoon lucuma powder
1 tablespoon maple syrup
1 teaspoon freshly grated nutmeg (grate on a microplane)
1/4 teaspoon ground cinnamon
1/4 teaspoon vanilla bean powder
Blend the cashews and water in a high speed blender until smooth. Add the remaining ingredients and blend until smooth. Serve immediately. Serves 2 or 1 generous portion.
